Big, brown, beautiful bulla

Growing up in Jamaica we had an array of freshly baked goods to eat, especially during lunchtime at school.

BullasOne of my favorites was bulla. I loved bulla because it, like the other baked goods, is spicy and filling. It is also cake-like and is the size of the palm of your hand.

Bulla is it usually paired with avocado or cheese or butter or just by itself. Here’s my recipe:


  • 3 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 2 teaspoons ginger powder
  • 1 teaspoon allspice
  • 1/2 pound wet sugar or dark brown sugar
  • 2 tablespoons melted butter
  • 3/4 cup water


Mix all dry ingredients together. Add water and melted butter.

Put mixture in a well-floured board and roll the mixture to half inch thickness. Put enough water to combine all ingredients.

Cut the mixture into circles. Place on a lightly greased and floured baking sheet.

Bake at 400 degrees for roughly 20 minutes.
